Method

  1. Heat a large heavy-based pot over medium-high heat with a little olive oil. Brown the beef in batches to develop flavour. Remove and set aside.
  2. In the same pot, cook the onions until softened. Add garlic and cook for 30 seconds.
  3. Stir in the tomato paste and cook for 1–2 minutes to deepen the flavour.
  4. Return the beef to the pot. Add stock, Worcestershire sauce, carrots, potatoes, salt and pepper. Bring to a gentle simmer.
  5. Cover and simmer on low for 2–3 hours, stirring occasionally, until the beef is tender and the sauce thickened. Alternatively, cook covered in the oven at 160°C for the same time.
  6. Adjust seasoning before serving. Cool completely before portioning for storage.

Why Blade Roast

Blade roast comes from the shoulder, a hard-working cut threaded with connective tissue that breaks down into gelatine during a long, gentle simmer. That is what gives this casserole its silky gravy and fall-apart texture, something leaner cuts simply cannot do. It is also one of the most affordable cuts at the butcher, which makes it perfect for feeding a family generously. If blade is unavailable, chuck or gravy beef will behave the same way in the pot.

Variations

Replace 250ml of the beef stock with a dry red wine for a deeper, richer gravy. Add a sliced parsnip or two sticks of celery with the carrots for extra sweetness and body. For a slow cooker version, complete the browning steps on the stove first, then transfer everything to the slow cooker and cook on low for 7 to 8 hours.

Brown the beef in small batches and resist crowding the pot. Crowded beef steams rather than sears, and the seared crust is where the depth of the gravy comes from.

Cut the potatoes into large chunks so they hold their shape through the long simmer instead of dissolving into the sauce.

If the gravy is thinner than you would like at the end, remove the lid and simmer for a further 15 to 20 minutes to reduce.

The beef is ready when it gives no resistance to a fork. If it still feels firm at the 2 hour mark, it simply needs more time, not more heat.
