Roasted Pumpkin with Feta, Honey & Herbs

This roasted pumpkin is simple, but it brings colour, warmth and softness to the table in the best way. Long wedges roast until tender inside with beautifully caramelised edges, then are finished with crumbled feta, fresh rosemary and just enough honey to highlight the natural sweetness.
It is the kind of dish that feels generous without trying too hard. Perfect beside roast meats, grilled chicken, lamb or as part of a larger shared table.

Ingredients
Roasted Pumpkin with Feta, Honey & Herbs
- 1kg pumpkin, peeled and cut into long wedges
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp cracked black pepper
- 1 tsp dried oregano or Italian herbs
- 80 to 100g feta, crumbled
- 1 tbsp fresh rosemary, finely chopped
- 1 to 2 tbsp honey
Method
- Preheat oven to 210°C.
- Line a large tray with baking paper.
- Arrange the pumpkin wedges in a single layer.
- Drizzle with olive oil.
- Season with salt, pepper and dried herbs.
- Toss lightly or turn to coat.
- Roast for 35 to 50 minutes, turning once during cooking, until tender and deeply golden at the edges.
- Transfer to a serving plate.
- Scatter over the crumbled feta.
- Finish with fresh rosemary.
- Drizzle lightly with honey just before serving.
Notes
Don't discard the pumpkin seeds. Rinse them, pat dry, toss with olive oil, salt, sweet paprika and garlic powder, and roast at 200°C for 12 to 15 minutes until crisp and golden. My grandfather made these and they never lasted long.
Use less feta than you think. The pumpkin should remain the hero, with the feta adding creamy contrast rather than covering the surface.
Different pumpkin varieties cook at different speeds, so start checking from 35 minutes onward.
If your tray is crowded, use two trays. Space helps the pumpkin caramelise rather than steam.
