Roasted Cauliflower and Chickpeas over Creamy Hummus with Peri Peri Oil
Creamy hummus topped with warm roasted cauliflower, chickpeas, and a generous spooning of peri peri oil. A simple, nourishing platter built from pantry staples and made for sharing.

Peri peri oil has already found its way into some of my favourite recipes on this site, and bringing it to a platter of hummus felt like a natural next step. The same warmth and depth, settled into something softer and entirely vegetable-led. The hummus stays creamy with a little texture left in it, the cauliflower turns golden at the edges, and the chickpeas bring warmth and substance to the whole plate. A generous spoon of peri peri oil over the top while everything is still warm, a little parsley, bread on the side for scooping. Built from simple staples and made for the centre of the table, this is the kind of meat-free plate that still feels genuinely satisfying.

Ingredients
For the hummus
- 2 x 400g tins chickpeas, drained and rinsed
- 1/3 cup tahini
- 2 to 3 tbsp lemon juice
- 1 garlic clove
- 2 to 3 tbsp extra virgin olive oil
- 1 1/2 tsp sea salt, or to taste
- cracked black pepper, to taste
- 4 to 6 tbsp ice water, as needed
For the roasted cauliflower and chickpeas
- 1 medium cauliflower, cut into florets
- 1 x 400g tin chickpeas, drained, rinsed, and dried well
- 2 tbsp olive oil
- 1 tsp sweet paprika
- 1/2 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp sea salt
- black pepper, to taste
To finish
- 3 to 4 tbsp Peri Peri Oil
- 2 tbsp chopped flat-leaf parsley
- lemon wedges, for serving
- crusty bread, flatbread, or grilled sourdough, for serving
Method
- Preheat the oven to 220°C fan forced.
- Place the cauliflower florets and chickpeas on a lined tray. Drizzle with olive oil, then scatter over the sweet paprika, smoked paprika, cumin, salt, and black pepper. Toss well until evenly coated.
- Roast for 30 to 35 minutes, turning once halfway through, until the cauliflower is golden and catching at the edges and the chickpeas are lightly crisp.
- Add the chickpeas, tahini, lemon juice, garlic, olive oil, salt, and a little black pepper to a food processor.
- Blend until creamy but not completely smooth. Add the ice water a tablespoon at a time until the hummus is soft, spreadable, and still holding a little texture. Taste and adjust with more salt, black pepper, olive oil, or lemon as needed.
- Spoon the hummus onto a large shallow platter or plate and spread it out into generous swirls. Do not spread it too thinly. It should be thick enough to hold the warm toppings and catch the oil.
- Pile the roasted cauliflower and chickpeas over the centre, then spoon over the peri peri oil while everything is still warm.
- Scatter with chopped parsley and serve with lemon wedges and bread on the side for scooping.
Notes
A little texture in the hummus works beautifully here. It gives the platter more character and keeps it feeling relaxed and home style.
Hummus often needs more seasoning than expected. Taste before serving and adjust with extra salt, black pepper, and olive oil if it feels flat.
Dry the chickpeas well before roasting so they colour properly and catch at the edges.
Roast the cauliflower until deeply golden in places. That is where much of its sweetness comes through.
The peri peri oil is best spooned over at the end rather than added heavily before roasting. It keeps the flavour bright and gives the platter a more generous finish.
Serve with crusty bread, flatbread, or sourdough for a simple lunch, light dinner, or shared table.
