Portuguese Peri Peri Rice

This one builds its colour and warmth from sweet paprika, garlic and tomato paste cooked down until it turns deep and fragrant, the same base that sits underneath so much of our cooking. Finishing it in the rice cooker means every grain comes out separate and fluffy, ready to soak up the juices from whatever it is served beside. It earns its place next to peri peri chicken, but it holds its own on any weeknight plate.

Method

  1. Build the flavour base. Heat the olive oil in a small saucepan over medium heat. Add the diced onion and cook for 4–5 minutes, until soft and translucent. Add the diced capsicum and cook for another 2 minutes, allowing it to soften slightly. Stir in the garlic and cook for 30 seconds, until fragrant.
  2. Cook the spice base. Add the paprika, chilli flakes and tomato paste. Cook for 1–2 minutes, stirring constantly, until the tomato paste darkens slightly and the mixture smells rich and fragrant.
  3. Toast the rice. Add the rice and stir well so the grains are coated in the spiced tomato mixture. Cook for 1 minute, stirring.
  4. Transfer to the rice cooker. Tip the rice mixture into your rice cooker bowl. Add the hot chicken stock and salt, then stir gently.
  5. Cook. Close the lid and cook on the White Rice setting.
  6. Rest and finish. Once the cooker switches to warm, leave the lid closed and let the rice rest for 5 minutes. Fluff with a fork and stir through most of the parsley. Scatter the remaining parsley and the fresh chilli rings over the top to serve.

Storage Notes

Store leftovers in an airtight container in the fridge for up to three days. Cool the rice quickly and refrigerate within an hour of cooking, and reheat only once, with a splash of water or stock to loosen the grains, covered, until steaming through.

Notes

Toasting the dry grains through the spiced tomato base for a full minute before the stock goes in is what keeps them separate rather than gluggy. Do not skip it.

Use hot stock, not cold, when you transfer to the cooker. It brings the cooker up to temperature faster and the grains cook more evenly.

Long-grain rice gives the fluffiest result here. Basmati or jasmine work too, but avoid short-grain or risotto rice, which turn creamy rather than light and separate.

Let the tomato paste darken before the rice goes in. A minute or two cooks out the raw tinned edge and deepens the colour of the finished rice.

The Grace Table Tip

The heat in this rice is easy to dial up or down. For a family pot, build the base with paprika only and keep the fresh chilli rings for the adult bowls at serving. For more fire, leave the chilli flakes in and finish with extra fresh chilli. Either way the flavour base stays the same.

A word on heat. This rice carries genuine warmth, not just a hint. The chilli flakes in the base and the fresh chilli to finish build into a real kick alongside the paprika. For a milder pot, leave out the chilli flakes and rely on the sweet paprika for warmth and colour, then add fresh chilli only to the bowls that want it.
