A bright, sparkling spritz of Midori, limoncello, fresh lemon, Prosecco and Sprite. Sweet melon and sharp citrus over plenty of ice, ready in five minutes and made for celebrating.

My daughter Ashleey asked for something with Midori, Sprite and Prosecco, so we made it together, pouring and tasting until it felt right. The bottle of limoncello at the back of the cupboard turned out to be the missing piece, and a squeeze of fresh lemon brought everything into balance.

Midori gives it that sweet melon flavour and vivid green colour. Limoncello and lemon add a bright citrus edge, and the Prosecco and Sprite lift it into a light, sparkling spritz. Served over plenty of ice with a thin wheel of lemon, it is sweet, sharp and beautifully refreshing.

It became her favourite from the very first glass, so it carries her name. Pour it when the family gathers for a celebration, or on a warm afternoon that calls for something bright and cold.

Midori Limoncello Spritz

Method

  1. Fill a large wine glass generously with ice.
  2. Pour over the Midori, limoncello and fresh lemon juice.
  3. Add the chilled Prosecco, then top with Sprite to taste.
  4. Stir gently once or twice to combine, keeping as many bubbles as you can.
  5. Garnish with a thin wheel of lemon and serve straight away.

Notes

Chill the Prosecco and Sprite well before pouring. Cold bubbles keep the spritz lively without relying on the ice to do all the work.

Start with 45 ml of Sprite for a sharper, more Prosecco-forward drink, and increase to 60 ml if you like it sweeter.

Use freshly squeezed lemon juice. Its acidity balances the sweetness of the Midori, limoncello and Sprite and keeps every sip refreshing.

The Grace Table Tip

Pour the Prosecco and Sprite last and stir only very gently. Keeping as much carbonation as possible gives the spritz its light, crisp finish.

For a less sweet version, choose a dry Prosecco and keep the Sprite to 45 ml.
