  1. Salt the chicken and refrigerate uncovered for at least 6 hours, ideally overnight.
  2. Remove from fridge 20–30 minutes before cooking. Pat dry. Preheat oven to 230°C fan-forced.
  3. Rub lightly with oil and apply seasoning evenly.
  4. Roast the chicken at 230°C (fan-forced) for 25 minutes to develop colour and crispness. This initial high heat is what gives the chicken its deep golden colour and crisp skin, while the lower temperature ensures the meat stays juicy and tender. Reduce the oven temperature to 180°C and continue roasting for 1 hour 15–30 minutes, depending on the size of your chicken. The chicken is ready when it reaches an internal temperature of 75°C at the thickest part of the thigh. If you don’t have a thermometer, gently press into the thigh, the juices should run clear, not pink.
  5. Rest uncovered for 10–15 minutes, allowing the juices to settle. Carve the chicken, removing the legs first before slicing the breast, and serve immediately.
