Method

  1. Sprinkle the chicken breasts evenly with salt and place uncovered in the fridge for at least 30 minutes. This is the dry brine step and it makes a real difference to the finished result.
  2. Preheat the oven to 200°C fan forced or 220°C conventional.
  3. Add the potatoes, onion and garlic to a deep roasting tray. Drizzle with olive oil and season with paprika, Italian herbs and black pepper. Toss well to coat.
  4. Roast the potatoes and onion for 20 minutes.
  5. Remove the chicken from the fridge and lightly drizzle with olive oil. Sprinkle with extra Italian herbs and black pepper.
  6. Place the chicken breasts over the potatoes and onion.
  7. Return to the oven and roast for 22 to 28 minutes, depending on thickness, until the chicken is cooked through and reaches 74°C internally.
  8. Rest the tray for 5 to 10 minutes before serving.
  9. Spoon a little of the hot tray juices into a small bowl. Whisk with the olive oil and lemon juice, then lightly spoon over the potatoes and chicken.
  10. Scatter with fresh herbs and serve warm straight from the tray.

Notes

Dry brining is a small step with a big result. The salt draws moisture to the surface, dissolves, and is then reabsorbed back into the meat as seasoned brine. The proteins relax, the chicken stays juicy through the heat of the oven, and the flavour goes all the way through rather than sitting only on the surface. Even 30 minutes makes a noticeable difference.

Starting the potatoes before the chicken goes in gives them time to build colour and crispness before the chicken releases its juices into the tray. It is worth the extra step.

Go lightly with the lemon finish over the chicken. Too much liquid can soften the herb coating. A light spoon over the potatoes is where it really shines.

Larger chicken breasts will need the full 28 minutes or a little beyond. A meat thermometer is the most reliable way to check.
