Method

  1. Add the basil pesto, mayonnaise, sour cream, Greek yoghurt, lemon juice, Parmesan, cracked black pepper and salt to a medium bowl.
  2. Stir until smooth and completely combined. Taste and adjust the seasoning only if needed.
  3. Bring a large pot of generously salted water to the boil. Cook the pasta until al dente according to the packet directions. Drain well and spread over a large tray to cool completely.
  4. Toast the pine nuts in a dry frying pan over medium-low heat, tossing regularly, until lightly golden. Transfer immediately to a plate to cool.
  5. Once the pasta and chicken are cool, place the pasta in a large mixing bowl. Add the chicken, cherry tomatoes, bocconcini and red onion.
  6. Add most of the creamy pesto dressing and toss gently until everything is evenly coated. Reserve a little dressing to refresh the salad after chilling.
  7. Gently fold through the baby spinach. Cover and refrigerate for at least 1 hour until chilled.
  8. Before serving, give the salad a gentle toss and add the reserved dressing if the pasta has absorbed more than expected.
  9. Transfer to a large serving bowl and finish with the toasted pine nuts, pomegranate arils and a generous grating of Parmesan.

Allow both the pasta and chicken to cool before adding the creamy dressing. Warm ingredients will wilt the spinach and thin the dressing.
