Beef Mince Cottage Pie with Golden Potato Mash
A hearty cottage pie made with savoury beef mince, vegetables, and a thick layer of soft golden potato mash, baked until bubbling and comforting.

A cottage pie like this earns its place at the table quickly. The filling is rich and savoury, built slowly with beef, carrot, onion, and a generous pour of Worcestershire sauce, and the mash on top is thick, soft, and golden from the oven.
It is also one of those rare dinners that genuinely gets better the next day. Pack the leftovers into containers for lunch during the week, portion it into smaller dishes before baking and freeze them for the weeks when dinner needs to be effortless, or simply serve it again the following night to a table that will not complain.
The grated carrot melts quietly into the filling, which means the vegetables disappear beautifully without any negotiation at the table. If you have little ones who inspect their dinner closely, this is the recipe for you.

Ingredients
For the filling
- 1 kg beef mince
- 2 tablespoons olive oil
- 1 onion, finely diced
- 2 carrots, finely diced or grated
- 2 cloves garlic, crushed
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried oregano
- 1 teaspoon sweet paprika
- 1 1/2 teaspoons salt, or to taste
- 1/2 teaspoon cracked black pepper
- 400 g tinned diced tomatoes
- 1 cup beef stock
- 1 tablespoon plain flour
- 1/2 cup frozen peas, optional
For the mash
- 2 kg potatoes, peeled and chopped
- 40 to 60 g butter
- 3/4 to 1 cup milk, warmed
- Salt, to taste
- Black pepper, to taste
To finish
- A little extra butter or olive oil for the top, optional
Method
- Add the potatoes to a large pot of cold salted water.
- Bring to the boil and cook until very tender.
- Drain well and let them steam dry for a minute or two.
- Mash with the butter and enough warm milk to make a soft, spreadable mash.
- Season with salt and black pepper to taste.
- Set aside.
- Preheat the oven to 180°C fan forced.
- Heat the olive oil in a large frying pan or pot over medium heat.
- Add the onion and carrot and cook for 5 to 6 minutes until softened.
- Add the garlic and cook for 1 minute.
- Add the beef mince and cook, breaking it up well, until browned.
- Stir in the tomato paste, Worcestershire sauce, oregano, sweet paprika, salt, and black pepper.
- Sprinkle over the flour and stir well.
- Add the tinned tomatoes and stock or water. Stir until combined.
- Simmer for 10 to 15 minutes until thickened and rich. Stir through the peas if using.
- Spoon the beef filling into a baking dish.
- Spread the mash thickly over the top.
- Rough up the surface lightly with a spoon or fork.
- Brush or dot with a little extra butter or olive oil if you like.
- Bake for 25 to 30 minutes, or until the top is lightly golden and the filling is bubbling at the edges.
- Let it sit for 10 minutes before serving.
Notes
Grated carrot melts nicely into the filling and is especially good for family-style meals.
The filling should be rich and thick before topping with mash so the pie holds together well.
An extra tablespoon of Worcestershire sauce adds a little more depth and savoury richness
Extra potatoes gives a thicker, more generous mash layer, which makes the whole dish feel more homely and comforting.
You can portion this into smaller dishes for freezing.
Cool completely before freezing.
