Bacon Wrapped Sausage Tray Bake with Golden Potatoes & Garlic
Crispy bacon wrapped sausages roasted over golden potatoes, sweet onion and garlic. A simple one tray dinner that feels comforting, generous and deeply satisfying.

Some dinners do not need much explaining.
A hot tray pulled from the oven. Potatoes golden at the edges. Bacon crisping around the sausages. Sweet onion tucked between everything, soft enough to melt into the tray juices.
It is simple food, but it is the kind people remember.

Ingredients
Bacon Wrapped Sausage Tray Bake with Golden Potatoes & Garlic
- 12 sausages
- 12 rashers streaky bacon
- 800g potatoes, cut into chunky pieces
- 1 large brown onion, cut into wedges
- 4 garlic cloves, lightly crushed
- 3 tbsp olive oil
- 1 tsp sweet paprika
- 1 tsp dried thyme or oregano
- Salt and black pepper
- 1 tsp honey or chilli honey, optional.
Method
- Preheat oven to 200°C fan forced (220°C conventional).
- Line a deep roast tray with baking paper if needed. Add the olive oil to the tray.
- Add the potatoes, onion and garlic. Sprinkle with paprika, thyme, salt and black pepper. Toss well to coat.
- Roast for 20 minutes, turning once halfway if desired.
- While the potatoes cook, wrap each sausage with a rasher of bacon.
- Remove the tray from the oven and place the bacon wrapped sausages over the potatoes and onion.
- Return to the oven for 30–35 minutes, or until the sausages are cooked through, the bacon is crisp and the potatoes are deeply golden.
- Spoon a little of the hot tray juices into a small bowl and whisk with honey or chilli honey. Lightly spoon over the potatoes and sausages before serving.
- Rest for 5 minutes before serving warm straight from the tray.
Notes
A deeper roast tray works best for this recipe
Do not overcrowd the tray or the potatoes will steam instead of roast
If the bacon needs extra colour, grill for 2–3 minutes at the end
The honey finish should be subtle, not overly sweet
