Good bread, toasted properly. Avocado layered generously. An egg with crisp edges and a soft yolk. A little feta for salt and texture, and that final drizzle of peri peri oil bringing warmth and depth.

Ingredients
Avocado Toast with Fried Egg, Feta & Peri Peri Oil
- 1 thick slice pane di casa bread
- ½ ripe avocado, sliced
- 1 egg
- 1–2 tbsp feta, crumbled
- 1–2 tsp Peri Peri Oil
- Olive oil or butter, for frying
- Salt and cracked black pepper
Method
- Toast until golden and crisp on the outside, still soft inside.
- Arrange the avocado over the toast and season lightly.
- Heat a small pan over medium heat with olive oil or butter. Cook the egg until the whites are set and the edges are lightly crisp.
- Place the egg over the avocado and scatter over the feta.
- Drizzle with peri peri oil and finish with cracked black pepper.
- Serve immediately.
Notes
Pane di casa holds the toppings well and gives a balanced texture.
Cook the egg until the edges crisp slightly for contrast against the soft avocado.
Feta can be adjusted to taste depending on how salty you prefer the finish.
